  1. Sediakan bahan-bahan.
  2. Untuk hilangkan hanyir ikan tongkol, cuci bersih bahagian ikan terutama darah pekat. Ikan tongkol perlu direbus sebelum dimasukkan kedalam gulai. Ambil periuk, susun dua tiga helai daun pandan sebagai alas. Susun ikan satu lapisan. Tabur garam halus 1 1/2 sudu teh, 3/4 sudu makam gula melaka, hirisan lengkuas dan halia, renjiskan cuka ke atas ikan secara rata. Rebus guna api perlahan/kecil. Pastikan periuk ditutup semasa proses rebusan ini. Biarkan ikan sejuk sebelum dimasukkan ke dalam gulai.
  3. Kisar cili kering, bawang merah, lengkuas
  4. Masukkan bahan kisar, serbuk ketumbar, kunyit serbuk, santan dan air ke dalam periuk dan masak dengan api kecil sehingga menggelegak. Perlu dikacau selalu.
  5. Kemudian masukkan asam keping, garam dan gula perang. Kemudian masukkan ikan rebus. Masak hingga mendidih. Kemudian masukkan timun dan cili hijau. Kacau rata. Siap dan bolehlah dihidang.
