Instructions to make Mee Kari:
  1. Udang dibersihkan dan diasingkan kulit dan isi. Buang urat salur najis di tengah udang. Kulit udang direbus dengan satu mangkuk air. Setelah kulit udang kemerahan direbus. Biarkan sejuk sedikit, kisar halus kulit udang yang direbus.
  2. Kisar bahan : bawang merah, bawang putih, halia, lengkuas dan udang kering. Panaskan sedikit minyak, masukkan rempah 4 sekawan, serai dan daun kari. Kemudian masukkan bahan kisar. Tumis hingga naik bau. Setelah itu, masukkan cili kisar dan serbuk kari. Tumis hingga pecah minyak.
  3. Setelah rempah kari pecah minyak, masukkan ayam. Masak sehingga ayam sedikit kecut. Kemudian masukkan air udang yang telah dikisar. Tapis bagi mengelakkan hampas kulit udang termasuk dalam kuah.
  4. Tambah sedikit air jika kurang kuah. Setelah kuah mendidih masukkan udang. Kemudian masukkan santan. Kacau selalu bagi elakkan santan pecah.
  5. Masukkan asam gelugor, sedikit garam dan gula secukup rasa. Tambahkan fish ball dan fish cake. Biarkan ia mendidih sedikit masa. Akhir sekali masukkan tauhu pok. Tutup api.
  6. Hidangkan bersama mee kuning yang dicelur, taugeh dan sawi yang dicelur, telur rebus, cili merah, bawang goreng dan tauhu goreng.
