Basuh beras. Rendam 1/2 jam. Rebus 8 bunga telang + 1/2 cawan air sampai tinggal 2 sudu jus bunga telang. Rebus daging separuh empuk. Hiris daging.
Mula mula buat acar. Hiris timun, bawang dan cili api. Masukkan jus limau, garam…
Dan gula. Tambah daun ketumbar. Kacau dan sejukkan dalam peti ais.
Kemudian kita masak nasi. Panaskan periuk, cairkan butter dan minyak. Hiris 2 biji bawang, 2 ulas bawang putih & 1/2 inci halia. Tumis bahan hiris dengan daun bay dan 4 sekawan. Kacau sampai naik bau.
Kisar lagi 2 biji bawang dan bawang putih serta baki halia. Masukkan dalam periuk dan kacau sampai garing.
Bila dah garing, tambah air, susu manis…
Garam dan serbuk perasa. Kacau dan biar mendidih. Toskan beras dan masukkan dalam periuk. Kacau rata.
Ambil sesenduk beras dan 2 senduk air. Asingkan dalam mangkuk. Buat 3 mangkuk. Beras dalam periuk, masukkan dalam rice cooker dan masak macam biasa.
Panaskan pengukus. 3 mangkuk beras tadi campurkan serbuk kunyit, air bunga telang dan tomato puree & pewarna merah. Kacau rata.
Kukus sehingga nasi masak sekata.
Untuk sambal daging, kisar bawang besar, bawang putih, halia, chili flakes dan 1/2 cawan air sampai lumat.
Panaskan minyak, tumis bahan kisar sampai garing dan pecah minyak. Bila dah garing, masukkan daging dan asam keping.
Tambah tomato puree dan kacau sebati. Perasakan dengan garam,
Gula dan sos cili. Kacau sehingga daging empuk. Jika masih belum empuk, tambah air. Kacau dan bila hampir masak, tambah hirisan bawang holland. Kacau rata.
Bila dah masak, tutup api. Hidangkan bersama nasi minyak dan acar.
